I make this with dark sour cherries and add some thyme. I also use tupelo honey because I can get it in Florida and it does make a difference. I cooked the duck sous vide, so cant comment on that aspect of the recipe. I did make the cherry sauce and made a few alterations to improve. Firstly, I skipped the honey there is enough sweetness in the cherries and added a dash of balsamic vinegar to give it a little tang. Finally, I added some extra duck drippings, thyme and garlic from the sous vide bag to take it up a notch.
